圣诞节吃中餐!美国犹太人的这个传统竟然已有120年 外媒说….

就像春节的重头戏是年夜饭,圣诞节的高潮当然莫过于圣诞大餐了。

不过,据外媒报道,中餐正在逐渐占领人们的圣诞菜单。

尤其在犹太裔美国人的圣诞餐桌上,让人们垂涎三尺的美食可能并不是烤火鸡,而是左宗棠鸡(General Tso’s chicken)。

吃中餐过圣诞的传统由来已久

 

也许你还不知道,在美国,犹太人圣诞节吃中餐的传统已经有100多年的历史了。

近日,Vox新媒体网站写了一篇文章揭秘这其中的历史渊源。

文章作者采访了纽约大都会犹太教堂(Metropolitan Synagogue in New York)的教士、 《一个犹太人的圣诞节》(A Kosher Christmas)的作者Joshua Eli Plaut。

Plaut介绍道,美国犹太人在中国餐馆吃饭可以追溯到1899年,当时,犹太移民与中国移民比邻而居。

It begins at the end of the 19th century, on the Lower East Side, where Jewish and Chinese immigrants lived in close proximity. By 1936, a publication called the East Side Chamber News reported at least 18 Chinese tea gardens and chop suey eateries in heavily-populated Jewish neighborhoods. 

这一传统始于19世纪末的纽约下东区,那时犹太移民和中国移民就住得很近。1936年,据一份名为《东区商会新闻》的出版物报道,在犹太人密集的社区里至少有18家中国的露天茶饮店和炒杂烩的小餐馆。

经过一个多世纪的传承,圣诞节吃中餐已经变成犹太人一个近乎神圣的传统。

For over a century, American Jews have eaten American Chinese food on Christmas. This pastime has evolved to a near-holy tradition, parodied onSaturday Night Live, analyzed in academic papers, and reaffirmed by Supreme Court Justice Elena Kagan.

一个多世纪以来,犹太裔美国人往往会在圣诞节吃上一顿美式中餐。这已经演变成一种近乎神圣的传统,被《周六夜现场》调侃模仿,被学术论文分析研究,还得到了最高法院大法官艾琳娜·卡根的支持。

Plaut总结道,中餐见证了犹太人从东欧的传统饮食向美式中餐,再到其他泛亚美食的过渡。

It was a gradual transition from the traditional diet of Eastern Europe, to eating American Chinese food, to eating other pan-Asian cuisines, like Indian food. 

在美国公共广播电台的采访中,Plaut表示,现在犹太裔美国人在圣诞节吃中国菜已经成为一种美国传统。

Jewish Americans eating Chinese food on Christmas has become an American tradition. And it’s just something that’s become part of the holiday spirit. And it’s part of the season of joy that – it’s one of our minor contributions as Jews in America to the American way of life.

犹太裔美国人在圣诞节吃中国菜已经成为美国的传统和节日精神的一部分,是这个欢乐的节日的一部分——这是我们作为在美国的犹太人对美国生活方式的一个小小的贡献。

Citylab网站通过Yelp(相当于美国版的“大众点评”)和谷歌趋势进行的量化分析验证了这种传统。

Google Trends data lends some insight, showing that searches for “Chinese food” spike on Christmas compared to any other day of the year. On Yelp, the same pattern emerged: For the past six years, page views for Chinese restaurants peaked on December 25th, all more than doubling their usual share.

谷歌趋势的数据提供了一些洞见,数据显示,与一年中的其他任何一天相比,“中餐”的搜索量在圣诞节出现激增。Yelp上也出现了同样的现象:过去的六年里,中国餐馆的页面浏览量都在12月25日达到峰值,是平常的两倍多。

当然,谷歌趋势并没有揭示这些页面浏览者的宗教信仰,但在犹太人众多的地方,人们的搜索兴趣往往最高。

下面的地图按州对谷歌趋势的数据进行了可视化:红点越大,搜索“中国菜”的兴趣就越大。而根据伯曼犹太数据库(Berman Jewish DataBank)2017年的数据,绿色越深的州犹太人口比例越高。

犹太人为什么对中餐情有独钟

根据外媒分析,犹太人吃中餐过圣诞的传统有着深厚的历史、文化和宗教渊源。

《大西洋月刊》曾专门发表文章介绍犹太人在圣诞节吃左宗棠鸡的来龙去脉:

移民群体的惺惺相惜

纪录片《寻味“左宗棠鸡”》(The Search for General Tso)的制作人Jennifer 8. Lee在《大西洋月刊》的采访中表示,19世纪末20世纪初,犹太人和中国人曾经是美国最大的两个非基督教移民群体。

Jewish affinity for Chinese food “reveals a lot about immigration history and what it’s like to be outsiders,”she explained.

她解释说,犹太人对中国食物的喜爱“充分体现了移民的历史和作为局外人的感受”。

犹太教教士Plaut在美国公共广播电台的采访中表示,中餐馆在圣诞节为犹太裔美国人提供了避难所。

The Chinese restaurant was a safe haven for American Jews who felt like outsiders on Christmas Eve and Christmas Day. If you go to a Chinese restaurant, you become an insider.

犹太裔美国人在平安夜和圣诞节感觉像外人,而中餐馆为他们提供了避难所。如果你去一家中餐馆,你就成了圈内人。

In the last 35 years, Chinese restaurants on Christmas have really become this sort of temporary community where Jews in the United States can gather to be with friends and family.

▌犹太教的洁食规定

犹太教有着严格的饮食戒律,教徒只能选择符合犹太教教规的食物(Kosher),而其中一条重要规定是禁止牛奶和肉的混合。

Vox网站写道,相比法国菜、意大利菜和墨西哥菜,中国传统菜肴更有可能符合犹太教教规的要求。

In terms of kosher law, a Chinese restaurant is a lot safer than an Italian restaurant. In Italian food, there is mixing of meat and dairy. A Chinese restaurant doesn’t mix meat and dairy, because Chinese cooking is virtually dairy-free.

就洁食规定而言,中国餐馆比意大利餐馆安全得多。在意大利食物中,肉类和奶制品是混合在一起的。中国餐馆则不混合肉类和奶制品,因为中式烹饪几乎不含奶制品。

中餐与犹太人的文化契合

《大西洋月刊》指出,流行全球的中餐体现出极强的适应性和因地制宜的灵活性,这与漂泊的犹太民族有一种文化上的契合,也是犹太裔美国人的生活的一种表征。纪录片《寻味“左宗棠鸡”》的制作人Jennifer表示:

I would argue that Chinese food is the ethnic cuisine of American Jews. That, in fact, they identify with it more than they do gefilte fish or all kinds of the Eastern Europe dishes of yore.

我倒觉得中国菜是犹太裔美国人的民族菜肴。事实上,他们对中餐的认同,更甚于鱼饼冻(以色列菜肴)或古老的东欧菜肴。

中餐的国际存在感越来越强

不得不说,在海外“吃货”的选择中,中餐的存在感越来越强,在很多影视中都要时不时cue一下中餐。

这说明,中餐确实已经成为外国人生活中的一部分。当然,在喜爱之余,外国人也对中餐有了更多的思考。

11月30日,美国石英网发表题为《中国崛起为美国带来了更好的中餐》的报道,通过一则专门制作的视频报道让我们看到了当下中国美食在美国正在焕发着无限生机。

文章认为,现在除了左宗棠鸡,鸡肉捞面(chicken lo mein)、牛肉西兰花(beef and broccoli)这些最早出现的美式中餐,火锅、大盘鸡(big tray of chicken)、肉夹馍(pork burg)等已经成为美国食客的心头爱。

Today, New York City is seeing a proliferation of upscale Chinese restaurants that prioritize ingredients, ambience, and authenticity over catering to American palates.

今天,纽约市涌现的高档中餐厅,都是优先考虑食材、氛围和地道,而非一味迎合美国人的口味。

这么看来,是时候点亮自己的中餐技能,在遇到外国朋友的时候就能妥妥地展现自己的魅力了。
